Go into Workspace Switching - it's the little gear symbol down in the lower right of your ACADE status bar - and then select 'Customize.' Here, you'll be able to tell ACADE which of the two symbol builders you want to be associated to the toolbar button. You can make whichever of the two you prefer, be the command that is called from the button you're accustomed to using. The second one sounds like the newer version, the one that includes the attribute editor in the dialog box. This one does not have the attribute editor. The first one you described (I can't view your images, for some reason) sounds like the legacy symbol builder, which is often called the 'Black Box' symbol builder. Really, I think it's the same tool, with two different user interfaces, but I'm not sure. So, there are actually 2 symbol builders in ACADE.sort of.
